Can I work offline using the server edition of Manager and then sync and upload my data at a point in time, or just be able to keep working while there is no internet.
What do you mean?
Are you using the Cloud version?
Cloud edition always requires to be online.
As you wrote elsewhere that you would use Manager Server for yourself and clients then this means that this is publicly accessible via the internet and thus would also always requires to be online.
When single user you could create a backup, install a desktop version and import that backup (add business). Once finished you create a backup on the Desktop version and import into the online Server (add business) and remove the old version.
There is no automatic syncing between desktop - Server/Cloud nor is there an offline mode.
