First of all: I really like this program and am recommending it toothers who started their own business.
Now my ‘problem’:
When an invoice needs more than 1 page, is it possible to have the letterhead (my data, clients data, invoice nr etc.) on all pages?
Or do I have to use a custom theme?

It depends.
The built in theme has a fixed, repeatable header in place, however, chrome based browsers – and possibly other browsers as well – has an arbitrary limit of 250px on header hight.
You can definitely try walking on eggshells and deliberately choose a small logo, skip business details and reduce header content for each document individually – and that could actually do it for some, but the best option in my opinion is to create a new theme that minimizes header height once and for all.
