Generating Engagement Letters using Sales quotes, Footers & Data from Custom Fields

I usuUlly used Sales quotes for quotaionS and enagemenet letters

Now I am planning to use Footers for different Services offered/accepted and add the data from Customer custom fields i.e start datEs for each services (VAT start Date 1st Januray 2023)

Is there a list of variable I can read and add customer names and other deatils from custom fileds.
