I’m trying to create a simple sales order total, I don’t need to know by customer or product just the total order total. This would allow me to go into this report and choose, say beginning of the month to the present day. Just need a bit of guidance please.

You will not be able to do that. Sales orders are not financial transactions in Manager. So they do not appear in the general ledger transactions table.

Yes, you can do all kinds of things with the invoice totals. There are built-in sales invoice reports. And you can build custom reports with sales invoices. That is because sales invoices are actual financial transactions.
