When I click on the Settings–>Themes–>Edit, I do not get the html code to edit, the only thing I get is whether to make it active.

Is there any other way to customize the invoice template, or am I missing a step

you cannot edit a default theme.
you need to make it active, view it, and then copy it to a new theme where you can customize it.

I need to change the field names like Qty to Hours for eg. Any link you can provide which helps me will be great

the heading will change automatically depending on the Unit Name you have for your inventory item.
if all the line items have the unit name set as Hours, then Manager will automatically change the heading Qty to Hours. you do not have modify any theme for this.

You did not explain this statement. But if you record and invoice hours through Billable Time, they will be labeled as such.
