I have been using Manager since September, 2020; love it! The downside: the desktop computer is now approaching it’s 8th year of use. While I am not experiencing any issues with it yet, I feel that it’s life is on borrowed time.
What are my options for migrating to a new computer? I am familiar with back-ups and restore; my concern is, will Manager accept installation on another machine, including my existing data?
I am using the free desktop version: 20.8.99

You can absolutely change operating systems. All operating systems actually run the same software. See Backup, restore, import, and transfer businesses | Manager.
You might want to update to the latest version as you are hundreds of versions behind

Just to give you an insight as to the fact that it does work, I regularly move my backed-up data from Windows 10 to Ubuntu and back. The data is not system software or hardware dependant
