Inventory Setup

As a curiosity, I often see on online retail stores as well as other brick and mortar retailers, they have hundreds and larger ones have thousands of SKUs in miore than 100 categories like hair care, shoes, apparel, electronics, makeup etc. so I want the members to shed some light on how best to setup inventory accounts and what is the observed best practice in this case?

Should all SKUs be dumped into one inventory account and tracked into segments only through coding system or things like custom fields or should there be separate inventory accounts for each segment of goods stocked?
