I am having the same issue. I am on version number 23.1.11.592.
The HSN/SAC columns are not auto-filled in sale/purchase invoices.
They are not printed on the invoices even if I manually fill the HSN/SAC columns.
I have set the localization to India and all the necessary HSN/SAC fields are filled for both inventory and Non-Inventory items.

Still, there is a problem with it.
I am using Server Edition with Version 23.1.20.597
Inventory Item with HSN/SAC,
Sales Invoice Edit screen, where the HSN/SAC is Empty.
Final Sales Invoice, where Localisation HSN/SAC is not getting fetched.

Is the issue still there of not seeing the HSN in the invoice? Facing the same problem.

@Tut I’m currently using version 25.3.20.2180 the issue discussed here is still not resolved. Will there be an update for the issue here or do we have to Create a New Topic again. Also, I have researched he forum for discussions of similar issues but couldn’t find a solution other than creating a custom field but for localised version for India by default have a field for HSN/SAC in Inventory Item when the Country is set to India
And If we try to generate Invoice, the HSN code code will not be auto-filled and will have to add it manually
We have the same issue when creating the purchase Invoice as well
