Is there any way to switch an overdue invoice to say “Final Notice” and and mention debt collection etc?
I don’t think that is possible.
You can manually change the title progressively, see screenshot where on each invoice you should enable Custom title and put whatever you like.
You could also consider using Custom Fields.
