First of all, if your version still includes the Cash Transactions tab, you are more than 1000 version out of date. Update your software.
Second, no export of transactions from any cash or bank account (which will appear in the Receipts & Payments tab after you update) will include quantity information from line items. To get that sort of information, use a custom report: Create custom reports | Manager. The results will not be according to the overall cash transaction, but according to individual line items entered into the general ledger. In other words, there is no total quantity from any transaction stored in the database.
