Can I add expiration dates to products on Manager and use it to get notified?

Maybe and no. All units of an inventory item are considered identical and interchangeable. So if you want to treat a lot as having an expiration date, you must create a unique item for every expiration date.
Manager has no notification capabilities except the built-in ones, such as for recurring transactions. However, after a very recent improvement, you can set desired inventory levels and monitor stock level in the Inventory Items tab.
Lot and batch management will be added in the future.
