After clicking on amounts in summary, some are greyed out, I wish to delete them

I did change an account on a sales invoice to a different GL account, but the amounts still appear on the balance sheet in the old account.

Can you provide a bit more information about the change you made on the invoice and what you see on the Balance Sheet and what you were expecting to see after the change.

At the risk of asking the obvious, are you sure you clicked Update?
