you will have to hire someone locally with html skills to do it for you. the themes use liquid coding.

yes no need to edit theme… while inputting an inventory choose units there… this vl appear on invoice…
customize the theme if you need the UOM as a separate column.
else update the inventory item with the Unit and it will automatically show with the quantity on invoice.
just add UOM in Custom field under Sale Invoice - Line
than Manually Enter either Pcs or Mtr in Every Item in Sales Invoice
