By Law in my country, invoices should not be deleted. They should only be cancelled/void, and this should always be reflected on the transactions list.
Is this possible to archive with manager.io?

Issue a credit note. See Use credit notes for customer returns and refunds | Manager. This does not archive the sales invoice, but reverses all amounts owed and inventory movements.
Yes, the way I do it is by changing all prices in lines to ZERO. This way invoice will be voided without issuing credit notes.
Depending on local laws, modifying a sales invoice with zero-value lines might not be legal. If the law requires keeping a record of the invoice, changing it would not qualify. In my opinion, that is no different than deleting it.
The idea is to have a button that does not DELETE but voids it or creates a reverse movement on the system.
i.e.,
If the invoice is $200 if i click cancel it should keep the invoice and create a cancelation document of -$200 USD.

The best option to reverse invoices is what @Tut mentioned.
That is exactly what a credit note accomplishes.
But is there a way to disable the delete button?

No. But you can Undo a Delete in the History file.
