How difficult would it be to add a tick box to the inventory items screen to only show ‘Inventory In Stock’ (Inventory with at least 1 item in stock)?

I would love to have this feature too.
Well, there will be soon advanced search functionality implemented across all screens with tabular data. It will allow to filter inventory items where quantity > 0 too.
