Before posting this, I searched and couldn’t find the solution to remove or hide the Guide link from the server Edition.
Please let me know if there are any alternatives.

Short answer is you can’t do that.
But please allow me to explain why that came to be. Actually, the developer is of your same belief that guides shouldn’t be forced upon users and that was the case for quite a while.
However, it turned out that a very sizeable portion of users had strong opinions for having a link to guides.
There is an undocumented argument which you can pass to server edition to switch it off but I think it should be switched off by default. So the latest version (25.9.6) is doing just that.
Most people benefit from access to good help.
The documentation provided by Manager is intended to be good documentation and help most users.
As such showing it will help most users and make Manager a better product to use.
The default should be set to optimise the user experience for most users, so should default to show help.
The only rationale reason to NOT show help I can think of is a white label reseller to hide normal help and hide independent software purchasing options to artificially increase their customers dependency on the support and subscription the charge.
unless most Manager sales are via these white label resellers, default to hiding help is the tail wagging the dog and makes Manager a worse product.
perhaps a compromise is to publish the option to show or hide help.
