need help with customizing (distributing the data fields in different areas on the sheet, change size of the data fields) invoices/delivery notes etc.

this will require html skills. please hire a local programmer if you personally do not have the necessary skills. the themes are written in liquid.

my programmer wants the code of an already made invoice template in order to do the customization. Where can I find that ? can you email one?
you can find all the default themes in Manager itself.
go to Themes under Settings.
