Classic custom fields

Do I need to create all my custom fields again or am I misunderstanding that eventually they will all disappear/be deleted?

If so, can I simply move my old custom fields over to new subcategories?

If I need to create them again, how do I get all the information from previous forms moved over to the new custom fields of the same name?

Custom Field Dropdown Lists

When classic custom fields are removed, they will be automatically converted to new custom fields. There won’t be any data loss.

I tried to convert classic to new custom fiels so as explained I have removed a classic custom field (date format) but nothing was created on referent new custom field : the data seems to be lost as it definitively desapear from classic custom field list…
Do i missed something in the process ?
