When I add categories to chart of accounts for the profit and loss statement they don’t appear as a choice. What am I doing wrong!

By categories, do you mean accounts? Provide a screenshot for category creation.
Also where do you expect these categories to appear? Show a screenshot where they should appear.
When adding a new journal entry my new accounts don’t appear only the ones that were set up already. It is strange that they appear on the profit and loss statement.
They don’t appear in the drop down list.
You need to post a screen shot of your chart of accounts from Settings.
In bold you have groups. And you cannot post an entry to a group.
