We have a sales tax system in South Africa, as does England. I see no way of adding a column into the invoice to handle these charges.

(Reading the Guides is almost always the answer.) When needed, tax-related information will appear automatically. A basic design principal of Manager is that unnecessary elements (meaning those that have not been enabled or created) do not show.
