I have set up a Project as described in the Guides but when I go to Payments or Receipts the Project Field is not visible?
Have you selected an account? Project field will reveal itself after account is selected.

To expand, the Project field only appears when accounts where project designation makes contextual sense. For example, it does not appear for Accounts receivable, because the project was already designated on the sales invoice. This prevents double counting.
