Please show the edit screen of the one of the preview that shows 10% VAT 2.955 BHD.

Tax column on edit screen will only be visible when appropriate item or account is selected.

Please check what was i did until yesterday the screen showing with TAX code In Payment Voucher

Thank you for the screenshot, as expected you selected and account that is subject to tax showing the tax code column. In the empty example you have not selected an item or account that is subject to tax and thus will not appear until you select one as @Lubos explained.

Uncheck the ‘Amounts are tax exclusive box’ and see what happens.
