On the we vesion their is no wy to update invoice that when you create a new invioce that what you have select is their when you to a new invoice.
Like in screen shot or is this under new place.
It is also not under settings

Is it possible to have a Sales Invoice Form Default value for 1 customer but not other customers?
That’s not possible. However, you can still use the Copy to and Clone and that should achieve the same effect, more or less.
