The proper variable for the document date from the fields array

Hi,

I am building a custom theme but since I don’t want the things from the fields array grouped together, but rather just the document date or due date somewhere I need to know what the variables are.
I found a list but when I use fields[0].text for example it doesn’t work. Where can I find an up to date list to the individual variables that are used in this for loop?

If you output the variable itself, you will see a string representation of it which includes all key names and their respective values.

I have tried that but I don’t get anything usable the way I do it. How would you go about it?
