How do I show expense items in the PnL as a percentage of Sales or Turnover in a column next to the numbers?

You cannot do this. And there has never been a mention of such a future capability. The closest you can get is to create a budget. See this Guide: Manager Cloud. Or you can export your P&L statement to a spreadsheet and manipulate the numbers.
