I’m trying to set up a multiple-condition rule, but none of the conditions seem to be recognised.
My goal is to create a rule that allocates an expense to Drinks Expense if the description contains any of the following keywords: cafe, coffee, or espresso.
Does anyone have advice on how to structure such a rule correctly?
Any examples or guidance would be greatly appreciated!

I may be wrong, here.
You have set up conditions that ALL have to be present in order to be effective ie you have created a Boolean AND function.
Manager has not the Boolean logic OR function so what you are trying to do is not possible.
@muffin is correct.
Just to add my two cents @theaccountant, you need to create three separate rules in your case.
Manager had Boolean and but not or
You can work around this limitation by duplicating the bank rule for each or condition
