Please advise if it is possible to have a custom field set up so to be only visible to selected users? This helps us enable an approvals set up where someone will approve a document..for example a update a Purchase quote or Puchase order.

Unfortunately, that’s not currently possible right out of the box…
however, you can write an Extension of Source -> Inline to selectively hide/disable the fields for certain users.
