Lately, I’ve noticed that when I generate an invoice, the ‘Description Field’ is populated with the ‘Account’ item I’ve tagged to a line item.
I think it’s unnecessary for my customers to know the Account item I tag that line item too.

Your post is confusing. There are two types of description fields. And accounts are not items. Please illustrate what you mean with a screen shot. And what do you mean by “tagged?”
The ‘Sales - Consultancy’ is an income Account that appears automatically under the Description Field when tagging my line item during invoice generation. ‘Tagging’ is when I select which ‘Account’ in my Chart of Accounts a transaction will come under.
It is impossible to tell anything from your screen shot except that you are using a custom theme. You are responsible for its performance. Or possibly you are using a line item custom field.
You also need to show the Edit screen—all of it.
