is it possible to change the column widths of custom fields in the grid view?

No that is not possible! Changing column widths, not only for custom fields, has been discussed on the forum extensively. If you would like more explanation (huge amount of posts) then search the forum but do not expect it to become possible.
By “grid view” I assume you mean the tab listings. Column widths on these screens are adaptive, depending on the width of the Manager window, which can depend on the device on which you view them.
